Thick Old-Fashioned Vegetarian Cabbage Soup
Ingredients:
1 head of cabbage, cut into 8 sections
3 cups celery, diced fine
2 cups cauliflower, sliced 3 cups onions, diced
2 cups diced tomatoes or 2 cans stewed tomatoes
2 cups sliced mushrooms
2 Tablespoons olive oil
6 cups vegetable stock
1-2 garlic cloves, minced
Salt and pepper to taste
Preparation: Sauté onions in olive oil until brown. Combine with first four ingredients in large cooking pot. Bring to a boil and simmer for 30 minutes until tender. Then add all vegetables. Serve with your favorite whole wheat bread. For a non-vegetarian version, just add cubbed chicken.
